History: The Signal Post takes inspiration from the Blue Train which runs between Pretoria and Cape Town, one of the world's most scenic routes.
Regional information: The Western Cape is the hub of South Africa's wine production, with individual growing areas producing a wide variety of wine styles. The hot, dry climate produces rich, concentrated styles which remain balanced thanks to cooling Atlantic breezes.
Vinification: The Chenin Blanc grapes were crushed, and allowed to settle before a cool fermentation at between 12-15C. The wine stayed in its lees before bottling to add complexity.
