2 x 6" cakes 200g Sponge Mix 60ml (4 tbsp) cold water 1 medium egg bake for 15 mins

400g Sponge Mix |
120ml (8 tbsp) cold water |
2 medium eggs |
bake for 20 mins |
2 x 8" cakes |
600g Sponge Mix |
180ml (12 tbsp) cold water |
3 medium eggs |
bake for 25 mins |
Pre-heat oven to 200°C / Fan 180°C / 400°F/ Gas Mark 6.
Grease and line two appropriately sized round, sandwich cake tins.
Place the sponge mix into a bowl.
Add the water and eggs.
Using an electric mixer, whisk on medium speed to start then increase to high speed for 3 minutes.
Divide the mixture evenly between the two lined sandwich tins.
Bake in the centre of the oven until well risen (see table above for times)
Cool in the tins for 5 minutes before transferring to a wire rack.
When completely cool, sandwich together with a filling of your choice.
