INGREDIENTS:Chilli Powder, Cumin Seeds, Coriander Seed, Garlic Powder, Ginger, Turmeric, Paprika, Cardamom, Fennel Seeds, Fenugreek, Cinnamon, Star Anise.
Beef Madras Curry - Serves 4
Before cooking: Pre heat oven 170°C / Fan 150°C / Gas 3. Peel and slice 1 medium-sized onion. Crush 4 garlic cloves. Peel and finely grate 2 tablespoons of fresh ginger. Finely chop 2 long red chillies. Dice 800g of braising steak.
During cooking: Heat 3 tbsp of vegetable oil in a large, flameproof casserole dish. Add the onions, garlic, chopped chilli and ginger. Cover and cook over a low heat for 15 minutes until very soft and lightly coloured. Stirring occasionally.
Add 2 tbsp of the madras powder, 400g chopped tomatoes and 1 tbsp tomato puree. Cook over a high heat for 5 minutes stirring constantly to make a thick sauce.
Add the beef and whole chillies. Brown for 2 minutes.
Pour over 750ml of beef stock and bring to a simmer, whilst stirring. Transfer the onion and cover. Cook for approximately 1 hour 30 minutes, until the sauce is thickened and the beef is tender. For more intense flavour increase curry powder to taste.
After cooking: Remove from heat. Season to taste, garnish with fresh coriander and serve piping hot with basmati rice. Check food is piping hot. All cooking appliances vary. This is a guide only.
