History: Made by Laurent Miquel whose family has been producing wine from their home estate in the rugged languedoc region since 1791. The vines are grown at high altitude on ancient slate oils which give the wine a unique mineral backbone.
Regional information: The grapes are grown on the higher hillside sites of AOP Faugères. One of the main characteristics of this terroir is the soil which is made of schist (shale). Schist provides a poor soil with good drainage but with the characteristic of retaining water and capturing the heat of the day to store it at night and the wines have a distinctive minerality and warmth from the Faugères terroir.
Vinification: The grapes are machine harvested in early morning for added freshness. After dawn harvesting the berries are vinified by whole bunch maceration for 15 days and this traditional technique brings out the aromatic complexity of the Faugères terroir. Then we press the must and only select the best part of the wine to start the aging in stainless steel tanks that preserves the intensity of the aromas. When we consider that the wine is ready, the wine is filtered and then bottled.
