Tantalising Turmeric and Yellow Split Pea Dip
1 Rinse and drain 200g yellow split peas. Peel and chop one onion.
2 In a pot, sauté the onion in 1 tbsp olive oil until soft. Add 1/2 tsp cumin, 1tsp turmeric and the split peas and stir for a couple of minutes. Add 300ml vegetable stock, 300ml water, and salt and pepper to taste.
3 Bring to a boil and simmer over very low heat until the split peas are totally soft - about 30 minutes. Add more water if needed.
4 Remove from the hob and use a hand blender or masher to reach a smooth texture. Squeeze in some lemon juice, a sprinkle of thyme and cracked black pepper to serve, and enjoy!
