History
Our maiden vintage (non vintage) was made in 1991. It was decided to produce a Non Vintage house style to secure consistency and continuity of the style. Chardonnay for fruit and finesse and Pinot Noir for intensity and palate weight.

Regional Information
Hand picked from our vineyards in Robertson, Franschhoek and Stellenbosch. All home grown fruit is then transported to Robertson where it is produced in the Methode Cap Classique cellar, Robertson. 80 % of all fruit comes from our Robertson estate and the balance from our other vineyards.

Vinification Details
Grape selection and hand picking in the vineyards. Whole bunch pressing ensures fractional recovery. After settling of juice the two varieties are fermented separately. They remain on light lees after fermentation and then the different Chardonnay and Pinot Noir portions are cross-blended. The use of reserve wine, should the blend need it is blended with the new base wines. Anything from 0 to 10% could be added if necessary. The base wine is then prepared for bottling by protein and cold stabilizing the final blend. It is then bottled and left for 15 to 18 months yeast contact time before disgorgement.
