Our No. 1 30 Hour Hickory & Oak Smoked Scottish Salmon is dry cured with salt and Demerara sugar and smoked in traditional kilns over mesquite, apple, hickory, and oak chips up to 30 hours. This long, slow smoking infuses the fish with a really intense smoky flavour that makes it irresistibly moreish. Delicious with rye bread and a spoonful of crème fraîche.
