- Chicken breast 2
- Flour 2tbsp
- Large egg 1
- Vegetable oil 75ml
- Coconut milk 200ml
- Cooked rice 250g
- Mixed salad leaves 80g
Cook
- Cook the rice according to the packet instructions then set aside
- Butterfly the chicken breasts into two then place the whisked egg, flour and breadcrumbs into separate bowls
- Dip each piece of chicken first in the flour then the egg and finally the breadcrumbs, coating both well
- Shake the can of coconut milk then in a saucepan add the curry paste + coconut milk and bring to a simmer
- Heat oil in a frying pan and shallow fry your chicken until golden
- Once fully cooked, slice and arrange on two plates alongside the rice, pouring the katsu sauce over the chicken + rice
- Serve with side salad tossed in the salad dressing
