The elegance of Jamón Ibérico Cebo de Campo, produced from Ibérico-Duroc pigs; is paired with an intensely flavoured Ibérico Chorizo de Bellota and a revered cured loin 'Ibérico Lomo', both produced from purebred Ibérico pigs raised on a rich diet of acorns.
Nacho Manzano has spent the past 30 years sourcing the best ingredients from across Spain for his world renowned restaurants, creating traditional, regional and authentic Spanish dishes for the menu. He holds 2 Michelin stars for Casa Marcial, the restaurant he opened with his sisters in 1993 in their home town of La Salgar, Asturias, and another star for his 'NM' restaurant in Oviedo, the capital of Asturias.
