Madras curry is a spicy red tomato based curry originating from Chennai (Madras) in Southern India. Simply fry off some garlic and onions followed by the curry seasonings to create a "masala" paste. This fiery curry is perfect using chicken, porkm beef or even vegetables. Most often served with rice, fresh coriander and raita.
