A vibrant chicken korma with tangy orange zest and punchy garam masala. Having discovered the orangeries of North Africa and Spain in the 1930s, my great uncle returned home to set up one of his own.
This was his recipe to surprise guests by adding oranges to a korma and was long associated with my family. It disapproved for decades before it was revived a few years ago from memories of family conversations. A celebration of my culinary heritage. (Asma Khan)

Cooking Guidelines
All cooking appliances vary. This is a guide only. Always ensure food is piping hot throughout before serving.
Oven cook - Preheat oven to 190C, 170C Fan, Gas 5. Remove sleeve and place on a baking tray on the middle shelf of the oven. Cook for 20 to 22 minutes. Allow to stand for 1 minute. Stir and serve. Microwave - Remove sleeve and pierce film several times. Microwave (800W) for 3 minutes, peel back film, stir and re-cover. Cook for a further 2 minutes. Allow to stand for 1 minute. Stir and serve.
