History: All vines are trellised. Average age 10 - 15 years on the Sauvignon Blanc. Good canopy management was exercised on the blocks to ensure good quality fruit. Vineyards are irrigated with drip irrigation in Summer time.
Regional information: A beautiful, region with many different micro-climates. Cold wet winters and long hot summers, with a huge array of interesting and diverse soil types. 800mm average annual rainfall. Warm and dry in summer, cold with an above average rainfall in winter.
Vinification: The grapes were hand picked and hand sorted prior to de-stemming. After the grapes were pressed, the juice was fermented in stainless steel tanks for 15 days with cooling. After fermentation the wine was left on the lees for 2 months before being racked. No malolactic was done in the final blend.
