Their organic vineyards use composted manure instead of chemical fertilisers and encourage natural insect predators instead of insecticides. The organic Glera for this Prosecco is sourced from selected vineyards in Veneto & Friuli Venezia Giulia, and the Pinot Nero is sourced from carefully selected plots in the Veneto region.This is a blend of 85% organic Glera and 15% organic Pinot Nero and they undergo secondary fermentation using the Charmat method at a controlled temperature of 14-15°C.
