History: The 'appassimento' style refers to grapes which have been hand-picked and then dried out to concentrate the sugars - a process that is practised widely in the north-eastern regions of Italy.
Regional information: This wine comes from the Romagna DOC in the eastern hills of Emilia Romagna in the north-east of Italy where Sangiovese is the most widely planted grape. Vinification Details - The Sangiovese grapes are vinified in stainless steel tanks at temperatures of between 18-28C for around 7 days. Following the fermentation, 30% of the wine is left to age in 25hl oak casks for 6 months. A small proportion of the grapes are dried in small wooden cases before being fermented, resulting in a rich, full bodied style.
