Vinification: Hand picked grapes in March, pressed using vertical hydaulic press, maceration for 4-6 hours at 15-18°C followed by Classic fermentation with a cold pre-fermentation during 5 days with selected yeast between 25-27º C. No malolactic treatment. Matures in tank.
