Sainsbury's Ingredients
- 2 potatoes
- 300g chicken breast fillets
- 1 can sweetcorn
- 2 sachets Heinz mayonnaise
- 1 onion
- 90g baby leaf salad
Get prepped
- Heat the oven to 220C / Fan 200C / Gas 7 and half fill a large pot with boiling water.
- Cut the potatoes into wedges and put them into the boiling water to par-boil for 5 mins.
Tip
Pat the potato wedges dry with kitchen paper if needed to help them turn golden in the oven
1. Marinate the chicken
- Sprinkle the piri piri glaze evenly over the chicken fillets on a baking tray, and keep aside.
- Drain the par-boiled potatoes and let them dry in the colander.
2. Roast the chicken and wedges
- Toss the potato wedges with 1 tbsp of oil and the spicy wedge mix on a baking tray then put both baking trays into the oven to cook for 25 mins, or until the chicken is cooked through and the wedges are crisp. (put the wedges on the top shelf!)
3. Meanwhile, make the sweetcorn aioli
- Drain the sweetcorn, then tip the kernels onto some kitchen paper to dry them off slightly.
- In a bowl, mix the mayonnaise with the Saffron Seasoning.
- Heat 1 Tbsp of oil in a pan over a medium heat and add the onion. Fry for 8-10 mins or until golden brown, then add the caramelised onion into your seasoned mayonnaise.
- Put the same pan over a medium-high heat and then add the sweetcorn. Fry for 3 mins, or until lightly golden. When the corn has cooled down, tip it all into the bowl of mayonnaise and fried onions. Stir it all together.

Serve!
Serve the piri piri chicken and wedges with the baby leaf salad, along with the sweetcorn aioli.
