Vinification: The winemaking method for white wine is used and the must is obtained by soft pressing in order to prevent the natural copper colour being extracted from the skins. Fermentation is carried out with the use of selected yeasts and at controlled temperature (20 °C). It is subsequently finished in stainless steel tanks followed by stabilisation and sterile cold bottling.
History: In line with tradition in Trentino, this wine originally from Burgundy is produced in its classic "straw" style instead of the “copper-coloured” version sometimes used in other winemaking areas in Italy.
Regional information: Production area: the lower hills in the Valle dell'Adige and on the valley floor, as long as the soil is well drained and the area ventilated. The conventional Pergola Trentina training system is used, alternated with the more modern Espalier methods.
