History
You will be familiar with the archetypal Touraine Sauvignon produced by Jean-Luc Mardon at his small estate near Oisly in The Loire.
Regional Information
Vineyards are on sandy soils on clay subsoil. Vines are 20 years old, planted at 6600 plants / ha.
Vinification Details
Harvested at optimal maturity (analysis and tasting of grapes), grapes are fed into a pneumatic press. 20-25% will be macerated, depending on the characteristics of the vintage. This is followed by static settling for 12 to 24h. Fermentation is slow at 18 C for three weeks in stainless steel vats.
