The label has been employing organic farming methods since 1998 to bring out the most natural flavours from its home of Lucera, in Puglia. Slowly ground from Brancaleone and Senatore Cappelli wheat varieties, the coarse semolina is bronze-drawn to achieve a porous structure that beautifully holds flavour when cooked al dente.
