Though Ox has worked across many South Australian regions, a large part of his career was spent crafting Chardonnay for Petaluma in the Adelaide Hills. He also lives in the Hills and Chardonnay is his favourite drop, so an Ox Hardy Adelaide Hills Chardonnay was a natural extension to the range. Ox captures the unique expression of the region each vintage, delicately playing with oak to add a subtleness that keeps your palate guessing well after the finish. The Ox Hardy Chardonnay is from mature vineyards in the Adelaide Hills, one just west of the Oakbank racecourse, the other in the shadow of Mt. Torrens.The fruit is selectively machine picked, with the juice fermented in older French oak barriques and hogsheads, and approximately 20% in stainless steel. Malo-lactic fermentation was induced in both barrel and tank.The finished wine spends 10 months total in barrel before blending and bottling.

Beautiful straw colour, this Chardonnay is bursting with nectarines, yellow peach, grapefruit with a hint of hazelnut and flint. Beautifully integrated oak, the majority of which is second use, offers a slight spice and a fuller body.
History
Andrew Hardy is one of Australias most respected and influential wine industry leaders. A fifth generation winemaker, he is the great-great grandson of Thomas Hardy, the Father of the South Australian Wine Industry.
Andrew has 36 years experience making wine in the Adelaide Hills, Clare Valley, Coonawarra and McLaren Vale working chiefly at Petaluma. He has also made wine in California, Oregon and Bordeaux and is a Trustee of the Royal Agricultural and Horticultural Society of South Australia. Whilst at Knappstein in Clare, Andrew was awarded the Warren Winiarski Trophy for 'Best Cabernet in the World' and the Trophy for 'Best Australian Red Wine' for his Enterprise Cabernet. He was also pivotal in the industry's adoption of the screw cap closure.
Known for his elegant winemaking style, engaging manner and partiality for pink shirts and old British sports cars, Andrews winemaking philosophy is best described as minimalist, allowing the quality of the vineyard and its fruit to shine through.
Andrews childhood and enduring nickname Ox gives the eponymous label its name.

Vinification Details
The fruit was crushed and pressed before being transferred to oak for 100% barrel fermentation of which 35% was new. The wine underwent partial malolactic fermentation before maturing in 35% new oak, the remainder old oak in large and small format for eight months. The lees were stirred fortnightly for the duration
