Instructions
Roasting:
1. Preheat a baking tray with vegetable oil at 180C.
2. Wash and peel potatoes. Cut into a uniform size and par boil for five minutes.
3. Drain and carefully place potatoes on the preheated oiled tray and put back in the oven.
4. Roast for 60 minutes or until golden brown.
Baking:
1. Wash potatoes.
2. Position on a baking tray and place in the oven at 180C.
3. Cook for one hour or until soft in the centre.
4. Cut in half or into quarters, add butter and/or your favourite topping and serve.Recipes

Ingredients
750g new potatoes
6 sundried tomatoes, chopped
1 tbsp capers
1 tbsp pitted black olives, drained and chopped
1 lemon, zested (plus a little of the juice)
1 handful fresh parsley
1 handful fresh basil
1 pinch chilli flakes
4 tbsp extra virgin olive oil
Method
Step 1
Cook the new potatoes in boiling water until tender (about 10 mins).
Step 2
Meanwhile mix dressing ingredients together and season.
Step 3
When the potatoes are done, drain and tip back in the pan, halving any large ones.

Pour the dressing over while potatoes are still warm, mix well and serve.Package Type
