It is in the world-famous Pais del Cava in Barcelona, epicentre of Spanish bubbles, where this cava comes from. 3.000 Hectares are located between the municipalities of Sant Sadurn dAnoia (Cava capital), Gelida and Sant Lloren dHortons, in the north of the Alt Peneds, near to Barcelona city and Mediterranean sea. A privileged and unique territory, with an agricultural and viticultural character and tradition, of great landscape value, which is the basis for an innovative agricultural. Vinification Details
Made with grapes from vines grown organically throughout its process, it has followed the regulations of the \Catalan Council of Ecological Agricultural Production. We make a manual selection of the grapes. Once in the cellar, only the untreated must is used, in order to avoid all the astringent imperfections and the green notes that come with pressing. Fermentation takes place in stainless steel tanks at a very low temperature.
The second fermentation in the bottle is left at least 12 months in the cellar at a constant temperature of 14 - 15
