Coconut Chicken Noodle Bowl
Flavour kit
2 Rice noodle nests
1 Red pepper, sliced
400ml coconut milk
1 Lime
250g chicken, diced into approx 3cm pieces
Optional: coriander to garnish
Simple Swaps
Replace chicken with prawns
Make this vegetarian by using tofu instead of chicken or by adding mushrooms and strips of carrot
Prep time 5 mins
Cook time 15 mins
1 Heat 2 tbsp oil in a large saucepan on medium heat. Fry the chicken for 3 minutes with the curry paste.
2 Add the pepper and cook for another minute.
3 Add the coconut seasoning, the coconut milk and 100ml of water.
Bring to the boil and simmer for 10 minutes or until the chicken is cooked.
4 Meanwhile cook the noodles according to instructions, then drain and add to the pan.
5 Add a squeeze of lime to taste and top with fresh coriander if using.
