Hakubaku is a high quality range of Japanese noodles produced by the Kokumotsu company in Australia. Kokumotsu translates into English as \grain\ and Hakubaku as \white barley\, signifying the company's, and their noodle products', commitment to only the best raw ingredients. Hakubaku uses only the best organic grains, farmed in Australia and produced in the authentic Japanese way. Hakubaku uses a wide range of premium grains in its production including Japanese polished pearl barley, red rice, sorghum, amaranth, brown rice, black rice, foxtail millet, corn, and sesame. Their organic somen noodles are very thin noodles made of wheat flour, similar in style to vermicelli. Japanese somen is made by stretching the dough with vegetable oil, forming thin strands that are then air dried for later use. Somen noodles are typically used in cold noodle dishes and are served alongside a light dipping sauce known as \Tsuya\.
