Chocolate Chip Muffins
Ingredients
6 eggs
6 tablespoons melted coconut oil
6 tablespoon coconut syrup (or honey)
1 teaspoon vanilla extract
1/4 teaspoon sea salt
1/2 teaspoon baking soda
75g coconut flour
Chocolate chips to taste
Directions
1. Mix all dry ingredients in a bowl and set aside.
2. In another bowl, beat the eggs and mix in the coconut oil, vanilla, and honey. Add dry ingredients and chocolate chips and mix well!
3. Set aside for a few minutes to allow the coconut flour to absorb the liquid.
4. Scoop batter into a muffin pan and bake for 25-30 minutes at 175 Celsius / 350 Fahrenheit.
5. Enjoy!
