Vinification Details
Everything is done when making this wine to enhance the clean refreshing wine style. Speed and a considered hand are the best tools to make an appealing rose wine. Grapes are picked in the cool of night to preserve the fresh flavours and picked as quickly as possible.
Colour and flavours are gently extracted so as not to get too much of either, the focus is on elegance and balance. The red grapes; Grenache and Syrah remain in contact with the juice only briefly then being pressed incredibly gently and only the best bits of the juice that runs off at pressing are kept so that the wine just right balance. Some white grape varieties like the indigenous and admired variety Rolle are even added to bring extra floral flavours and some texture.
Fermentation is done in immaculately clean stainless steel tanks with temperature control to retain as much of the bright fruit flavours. Once the wine has finished fermenting the wine is settled, cleaned up and made ready for bottling. These wines are as simple to make as winemaking goes - No oak is added its all about getting a rose wine made with the maximum freshness.Producer
