Pad Thai is a light and fragrant noodle dish with tamarind, garlic, peanuts and shallots. The secret to great Thai dishes is the freshness and balance of Thai ingredients that are ground into paste. At Blue Dragon, we grind our paste in Thailand to capture all the rich flavours. Only three quick and easy steps are needed to create this mild street food classic. Don't forget your prawns, spring onions, beansprouts and an egg. Feeling creative? Feeling inspired?We love to personalise our Pad Thai with these handy tips:Add some fresh chillies for more heat.Try the dish with chicken instead of prawns.Add a teaspoon of fish sauce and palm or caster sugar to finish with a balanced flavour.Serve with some sushi ginger on top for an added flavour kick.

Recipes
Bring a pan of water to the boil and add a pinch of salt. Empty the noodles into the pan, making sure they're covered, and cook for 4 minutes or until soft. Rinse in cold water, drain and set aside.Get your wok smoking hot and add a splash of oil. Fry the prawns for 2 minutes (or until cooked if using raw prawns). Add the egg to the pan and stir until it looks scrambled.Add the cooked rice noodles and Pad Thai paste to the pan and stir fry for 2 minutes until the noodles are hot. Add most of the peanuts, the spring onions, beansprouts and the lime juice and stir together.Give the dish a good mix and serve with a final scattering of peanuts and a lime wedge.For an authentic Pad Thai we use...Serves 21 tbsp vegetable oilBlue Dragon Pad Thai200g prawnsA handful of beansprouts2-3 spring onions1 egg1/2 fresh lime, squeezedBlue Dragon Fish Sauce and palm or caster sugar to tasteEnjoy!!
