You will need:
- 100g Barley couscous, toasted
- 150ml Boiling water
- 1 Tbsp chopped coriander
- 1 Beldi preserved lemon
- Early harvest extra virgin olive oil
- Salt
Method:
1. Add the boiling water to the couscous
2. Leave for 5 minutes until water is absorbed
3. Peel the preserved lemons and cut into 3 mm cubes
4. Stir in the coriander and chopped lemons
