Ingredients: (Makes 12-15 cookies)
100g butter
100g soft brown sugar
100g Crazy Jack Chopped Apricots
25g White chocolate chips
1 tbsp honey
150g self raising flour
1/2 tsp vanilla extract
1. Preheat the oven to 170C, Gas mark 3.
2. Beat the butter and sugar together until creamy, then add the honey and vanilla extract.
3. Mix in the flour, chopped apricots and chocolate chips.
4. Divide the mixture, using your hands to roll into little balls.
5. Place on a greased baking tray, leaving a good space between each ball as they will spread out as they cook.
6. Bake for 10 minutes until golden brown. The cookies should still be soft and a bit gooey. Leave in the tray for a few minutes, and then cool on a wire rack.Instructions
