Get creative...Banana Loaf CakeIngredients50g Whitworths Banana Chips75g unsalted butter100g caster sugar2 medium eggs, beaten100g self raising flour1 large banana, mashedReady...Steady...Bake...Preheat your oven to 190°C / Fan 170°C / Gas Mark 5.Grease and line the base of a 450g loaf tin with greaseproof paper.Set aside 12 whole banana chips for decorating, then break the remaining chips into small pieces.Beat the butter and sugar together in a large mixing bowl then gradually beat in the eggs.Fold in the flour, mashed banana and broken banana chips until evenly distributedSpoon the mix into your prepared tin then smooth the top level.Decorate the top with the whole banana chips then bake for 35-40 minutes until well risen and golden.Leave to cool in the tin for 20 minutes then transfer to a wire rack to cool completely.Serve warm or cooled with a drizzle of toffee sauce!
