Vinification details: Made from 100% Chardonnay hand harvested grapes. Vinification: Cluster selection. Direct pressing. Cold skin contact before fermentation. Other techniques used: carbonic snow, enzymes and static free run. 15 days of fermentation in French oak barrels and concrete vessels at 12-15ºC. Ageing: 20% of the wine is aged in concrete, 50% in oak barrels of 225 lts and 30% in oak barrels 500 lts during 12 months. Bottle storage for 12 months.
