- Marinate skinned chicken thighs in the base sauce, grill for 8 minutes until charred, shred or chop up and finish off in the main sauce for a great smokey flavour

Preparation: cut the meat, fish or paneer cheese into generous pieces.
1. Heat 1 tsp of oil in a pan, add the spices and cook for 20 seconds.
2. Add the meat, fish or paneer and brown lightly for 2 minutes (not required for the fish) before adding the base sauce and simmering for 2-3 minutes
3. Stir in the main sauce and cook for 3-6 minutes or until the meat, fish or paneer is cooked through.
Serves 2-3 with rice or naan.

Marinade the chicken thighs in the base sauce, grill for 8 minutes until charred, shred or chop up and finish off in the main sauce for that great smokiness.

Add 1 tbsp of cream or butter for an indulgent treat or water for a thinner sauce.

Recipe
Preparation: cut the meat, fish/seafood or paneer into generous pieces.
If you don't like whole spices, powder these in a pestle and mortar and add them in at the end of step 3, alternatively if left whole remove them
with a spoon before serving.
