In this country rogan josh is closer in style to a hearty lamb curry from Punjab and this is the inspiration for our Rustic Rogan Josh. If you are not in a hurry, opt for leg or shoulder of lamb and cook gently for 11/4-11/2 hours, adding water as necessary.
