Sauce Facts: Rogan Josh originated in Kashmir, where it was a lamb dish traditionally made only with oil, yoghurt and spices. In this country rogan josh is closer in style to a hearty lamb curry from Punjab and this is the inspiration for our Rustic Rogan Josh. If you are not in a hurry, opt for leg or shoulder of lamb and cook gently for 1 1/4-1 1/2 hours, adding water as necessary.

Cooking guidelines: A versatile Indian recipe, delicious with lamb. Preparation: cut the lamb into generous pieces. 1. Heat 1 tsp of oil in a pan, add the spices and cook for 20 seconds. 2. Add the lamb, brown lightly for 2-3 minutes, add the base sauce and simmer for 2 minutes. 3. Stir in the sauce and simmer for 3-5 minutes or until the lamb is cooked through (1-1 ¼ hours for lamb cuts and 30 - 35 minutes for mince). Serves 2-3 with rice or naan.
