In south west Sicily lies the Valle Del Belice, home to a large green olives renowned for its succulent flesh and deliate flavour. Cold - pressed oil preserves that buttery flavour until you take your first bite. Bellissimo ! We keep it cold-pressed. Our olives are always slowly marinated using cold-pressed oils. Why?
