Shopping list / Ingredients to buy:

• 165g raw king prawns
• 1 bell pepper, chopped
• 100g chorizo, sliced
• 150g paella rice
• 80g peas, defrosted if frozen

Method:

• 1. Heat 1 tbsp of oil in a saucepan, fry the chorizo and bell pepper on a medium heat for 4 minutes.
• 2. Add the dry seasoning, stir and cook for 1 minute.
• 3. Add the rice, fry for 30 seconds, then add the paste. Stir to combine.
• 4. Add 400ml boiling water. Bring to the boil, reduce to a simmer and cover with a lid. Cook for 15- 20 minutes until the rice is cooked and absorbed most of the liquid. Stir occasionally.
• 5. Add peas and prawns, stir and cook for further 5 minutes, until the prawns are pink and cooked through. For an extra finishing touch, garnish with parsley and a lemon wedge.
