INGREDIENTS: Strawberry Compote (26%) [Strawberry, Sugar, Water, Cornflour, Lemon Juice (Sulphites)], Icing Sugar, Wheat Flour [Wheat Flour, Calcium Carbonate, Iron, Niacin, Thiamin], Palm Oil, Raising Agents (Monocalcium Phosphate, Sodium Bicarbonate), Rapeseed Oil, Dextrose, Flavouring.

Preparation
Cooking time: 14-16 minutes
Method: Oven
Makes: 6 mini Victoria sponges
You will need: 1 medium egg; 4 tbsp (60ml) semi skimmed milk; 80g softened unsalted butter; cupcake tray.

Method

Mini sponges:

• 1. Pre-heat the oven to 180ºC / 160ºC Fan / Gas 4.
• 2. Grease a cupcake tray - 6 wells with butter.
• 3. Empty the cake mix sachet into a large bowl and add 1 medium egg and 4 tbsp (60ml) milk and mix with an electric whisk for 1-2 minutes until combined.
• 4. Divide the mixture between the 6 greased wells and bake in the centre of the oven for 14-16 minutes until risen.
• 5. Cool in the tins for 5 minutes, run a palette knife or blunt knife around the rim of the cakes to loosen.
• 6. Carefully remove from the wells and place on a wire rack.

Icing:

• 1. Once completely cooled, slice each mini sponge into half.
• 2. Empty the icing mix into a bowl, put 1tbsp to one side. To the rest of the mix add the unsalted butter and mix well until light and fluffy.
• 3. On 6 of the half sponges spread the icing and on the other half sponges add the strawberry compote.
• 4. Place a compote half with an icing half together to make 6 mini Victoria sandwich sponges. Using the 1 tbsp of icing mix that was left, dust over the top of each sandwich.
