5 mins prep20 mins cookQuick & EasyYou Will Need:2 eggs +80 mls boiling water +80 mls melted coconut oil or sunflower/vegetable oil +3 tablespoons honey or syrupVegan Version:100mls boiling water +80mls melted coconut oil or sunflower/vegetable oil +3 tablespoons syrup - golden, date, rice, malt, maple or agaveDirections:1. Put your Sweetpea Muffin Mix into a bowl and stir through the boiling water, oil and honey/syrup. Whisk your egg and stir into the mix.2. Spoon mixture equally into 6 large muffin or cupcake papers in your muffin tin (can also be made in a loaf tin) and bake in pre-heated 180°C oven for 20-25 minutes until browned and a skewer inserted in the centre comes out clean.Get more goodnessAdd a handful of chopped nuts - pecans or walnuts to the mixture before baking.
