We produced our organic pearled spelt by bouncing it over rotating stones the outer layer of bran and "pearl" the grain. This means that during cooking it soaks up all the flavours of your dish and it makes the most amazing risottos, soups and salads.The Ancient GrainSpelt, an ancient grain, has been grown in Somerset since the start of the Iron Age. Spelt has gained in popularity in recent times because it's an excellent source of dietary fibre and contains protein as well as vitamins and minerals. It is both easy to digest and leaves you feeling fuller for longer as well as being a good source of slow release energy; so much so the Roman Army called it their "marching grain".

How to cook: As a rule of thumb, Pearled Spelt can be cooked exactly like rice. Rinse well and throw into soups, or boil for 20 minutes, strain and serve.

Recipe: Roast Radish, Feta and Pearled Spelt SaladServes: 4Preparation Time: 10 minutesCooking Time: 20 minutesTotal Time: 30 minutesIngredients:2 bunches radish (approx 300g)Slug olive oilSalt and pepper2-3 tbsp balsamic vinegar200g pearled spelt200g feta Handful peashoots3 spring onions finely chopped100g mange tout or sugar snaps1tbsp pumpkin seeds1tbsp sunflower seeds2 tbsp pine nuts, roastedMethod:1. Pre-heat the oven to 200 Celsius. Trim the green from the radishes and toss them in olive oil, salt and pepper. Arrange on a roasting tray, making sure they aren't too cramped, then pop the tray in the oven for 15 minutes.2. Meanwhile, put the spelt in a saucepan filled with cold water, bring to the boil and simmer for 15 minutes until just cooked. Drain well.3. After the radishes have had their 15 minutes, remove the tray, douse the radishes with balsamic vinegar and return to the oven for 5 minutes or until the radishes are wrinkled and the balsamic jammy.4. Tip the cooked spelt into the warm radish tray and toss in all the cooking juices.5. Add the feta, pea shoots, spring onions, mange tout, seeds and nuts and give everything a good mix.
