Called Encontrado, meaning found this Oloroso is a unique mature dry style Jerez Oloroso, aged in 5 butts (600 litre butt/cask), completely hiden and only recently discovered in our 235 year old cellar (established in 1781). Deep mahogany, amber colour and full cask oloroso character. This wine shows the elegant side of oloroso, with delicate reminders of salty caramel and antique furniture notes. Long and precise on the palate, finishing with warm dry extract length. This endless wine would stand up to good, pot roast, oxtail, game or even biryani chicken. But will also make a good end to a meal with creamy cheese such as stinking bishop, torta del casar or Brie. This wine has been minimally treated to get the maximum flavour into the bottle.
