

Sanchez Romate Amontillado Olvidado is a mature dry Amontillado sherry from Jerez, Spain, aged for years in 1,000-litre toneles and only recently rediscovered in the cellars. This vegan-friendly wine shows deep mahogany colour, delicate hazelnut and antique furniture notes, with a long, precise palate. Serve it with ribeye steak, country pâté, smoked ham or hard cheeses.

Called forgotten amontillado this unique mature dry style of Jerez amontillado, aged in toneles (1,000 litre butt/cask), completely forgotten about and only recently discovered in our 235 year old cellar (established in 1781). Deep mahogany, amber colour. Has full cask amontillado character. This is elegant, with delicate hazelnut reminders and antique furniture notes. Long and precise on the palate, finishing with fresh dry extract length. This endless wine would stand up to good, ribeye steak, country pate, smoked ham (jamon serrano) or hard cheeses (manchego, comte or cave aged cheddar). This wine has been minimally treated to get the maximum flavour into the bottle.
