How to prepare
Lightly dust your work surface with icing sugar, if cold, knead Icing a little until pliable before rolling out. To cover a marzipanned cake, slightly moisten the marzipan with boiled water. If the cake is not marzipanned, first brush the cake with boiled jam, preferably apricot, to ensure icing stays in place. Lift the icing over the cake using the palm of the hand and trim excess icing. To give a sheen to the surface, smooth with palm of hand. Icing will set firmly and cut cleanly without cracking.
How to ice a cake
Knead icing with palm of hand until pliable
Lightly dust a clean dry surface with icing sugar
Roll out icing to 5mm thickness
Lift icing using rolling pin and drape over cake
Smooth icing over cake from top to edges & down sides of cake
Trim away excess with a sharp knife
This pack will ice a 15-18cm cake
