INGREDIENTS: Shallot, Water, Spirit Vinegar, Rapeseed Oil, Basil (10%), Garlic (9%), Sugar, Red Chilli (6%), Lemon Grass (5%), Galangal (4.0%), Salt, Cornflour, Chilli Flakes (1.0%).

Thai Prawn Cakes - Serves 4 as a starter
360g raw tiger prawns, 1/2 jar of Sainsbury’s Fragrant Thai Base, 1 lime, zest and juice, handful freshly chopped coriander. To serve:1 lime, cut into wedges, Sweet chilli sauce

1. In a food processor, add the prawns, fragrant Thai base, zest and juice of one lime and half the coriander, blitz until everything is mixed, but still has texture.
2. Lightly shape into 8 rounds, about 1cm thick. (These can be made 24 hours ahead, if kept in the fridge).
3. Heat 2 tbsp vegetable oil in a medium frying pan; fry the cakes over a medium heat for 3-4 minutes on each side.
4. Garnish with the remaining freshly chopped coriander and serve with a wedge of lime and sweet chilli sauce.
