Ingredients: Roasted Coriander Seed, Roasted Cumin Seed, Chilli Powder (Chilli Powder, Cumin, Garlic Powder, Salt, Oregano), Paprika, Garlic Powder, Salt, Turmeric, Ginger, Cardamom, Coriander Leaf, Nutmeg.
Preparation and Safety
Chicken tikka curry - Serves 4
Before cooking: Peel and slice 1 medium-sized onion. Crush 5 garlic cloves. Peel and finely grate 3 tbsp of fresh ginger. Dice 4 chicken breasts (2cm). Juice ½ a lemon
During cooking: Heat 3 tbsp of oil in a large, non-stick saucepan. Add the onions, garlic and ginger. Cover and cook over a low heat for 15 minutes until very soft and lightly coloured. Stirring occasionally. Add 3 tbsp of the tikka curry powder and cook for 2 minutes, stirring constantly. Add 400g chopped tomatoes and 15g tomato paste. Bring to a simmer.
Add the chicken, 150ml water, 250g natural yoghurt, 150ml double cream and the lemon juice. Simmer for 20-40 minutes until sauce has thickened and chicken is cooked through. For a more intense flavour increase curry powder to taste.
After Cooking: Remove from heat. Season to taste, garnish with fresh coriander and serve piping hot with basmati rice.
