Preparation and Safety
Pre-heat oven to 200°C / Fan 180°C / 400°F/ Gas Mark 6. Grease and line two appropriately sized round, sandwich cake tins. Place the sponge mix into a bowl. Add the water and eggs. Using an electric mixer, whisk on medium speed to start then increase to high speed for 3 minutes. Divide the mixture evenly between the two lined sandwich tins. Bake in the centre of the oven until well risen (see table above for times). Cool in the tins for 5 minutes before transferring to a wire rack. When completely cool, sandwich together with a filling of your choice.
