Moreau & Fils is one of the oldest producers in Chablis and was founded in 1814. This wine is made from grapes picked from old vines, whose roots extend deep into the limestone-rich Kimmeridgian soil, imparting the classic mineral purity for which Chablis is so famed.

History: In 1814 Jean-Joseph Moreau, a young cooper, marries a local winemaker's daughter and inherits the oldest wine House of Chablis. Driven by passion for the vine and traditional values, he runs the business incredibly well and becomes very quickly one of the most important producers of wine in Chablis. He was a pioneer in the region and his success kept on rising.
Regional information: Chablis is the northernmost appellation of Burgundy, located in the Yonne department, about 16 km east of Auxerre and roughly halfway between Paris and the Côte d'Or. It lies closer to Champagne than to the main Burgundy wine areas, giving it a cooler climate similar to Champagne. This climate produces wines with high acidity and freshness.
Vinification: The vines are located on Kimmeridgian soils which thanks to the alternation of hard limestone and marl gives to Chardonnay grapes the best environment. The cool climate of this region produces wines with more acidity and flavours less fruity than Chardonnay wines grown in warmer climates. Ageing on lees in stainless tanks will take 8 - 10 months to get richness and complexity. Fermentation in stainless steel tanks for 12 days.
