Fondly Lasooni, Hindi for garlic, and named as such for the very simple reason that this marinade celebrates garlic at its most indulgent. Roasted until mellow and golden, then layered with smoky paprika, Kashmiri chilli, cumin and tamarind for a tangy lift, this marinade makes every ingredient it works with taste like a signature dish.

Coat: Choose and prepare 800g of meat, fish or vegetables, then thoroughly coat in the marinade. Cool: Place in the fridge for 30 minutes or overnight for maximum flavour. Cook: Simply barbecue, grill or oven cook until done.
