Serves 16
Ingredients
- 170g unsalted butter, softened
- 200g Pure Via Baker's Secret Soft Brown Sugar Alternative
- 130g Pure Via Baker's Secret Caster Sugar Alternative
- 1 tsp vanilla extract
- 1 medium egg
- 250g plain flour
- 1 tsp baking powder
- Pinch of salt
- 150g dark chocolate chips

1 Place the butter, Pure Via Baker's Secret soft brown sugar alternative and Pure Via Baker's Secret caster sugar alternative in a bowl. Whisk together with an electric hand whisk until pale and fluffy.
2 Beat in the vanilla extract and egg, then mix until creamy. Sift in the flour, baking powder and salt and mix to combine. Stir through the chocolate chips.
3 Divide the mixture into 16 balls and place on two baking sheets lined with parchment. Transfer to the fridge to chill for 1 hour.
4 Preheat oven to 180C / 160C Fan / Gas Mark 4.
5 Place the cookies in the oven and bake for 10-12 minutes. Remove from the oven and allow to cool on the tray before serving.
