Preparation and Usage

Barley with artichokes, shallots, mint and Ponti Zero Olio sundried tomatoes
Ingredients (serves 4)
150gr barley
1 shallot
4 artichokes
Fresh mint
Thyme
2lt vegetable stock
Extra virgin olive oil
150gr Ponti Zero Olio Sundried Tomatoes
Salt
Pepper


Method


In a saucepan, saut the shallot then add the barley and lightly toast it.
Add salt and stock and cook for about 30 minutes.
In a frying pan, heat the oil and saut the artichokes cut into four seasoned with thyme for about 2 minutes.
Finish the dish with the barley, artichokes and Ponti Zero Olio Sundried Tomatoes.
Finish with a drizzle of Olive oil, pepper and fresh mint leaves.
