Preparation and Usage
Barley with artichokes, shallots, mint and Ponti Zero Olio sundried tomatoesIngredients (serves 4)150gr barley1 shallot4 artichokesFresh mintThyme2lt vegetable stockExtra virgin olive oil150gr Ponti Zero Olio Sundried TomatoesSalt  PepperMethodIn a saucepan, saute the shallot then add the barley and lightly toast it.  Add salt and stock and cook for about 30 minutes.In a frying pan, heat the oil and saute the artichokes cut into four seasoned with thyme for about 2 minutes.Finish the dish with the barley, artichokes and Ponti Zero Olio Sundried Tomatoes.  Finish with a drizzle of Olive oil, pepper and fresh mint leaves.
